Sub Sandwich
Homemade way: Buy sub sandwich loaves and fill with whatever you like (i.e. lettuce, tomato, green pepper, onion, soy cheddar, pickles, etc) and whatever sauce you like (i.e. mustard, hummus, salad dressing, etc).
Lazy way: Get some Subway veggie subs as above.
Bonus: Add Tofu Cutlets or Chickpea Burger Patties or falafels.
Club Sandwich
Toast 3 pieces of bread, fill with two layers of lettuce, tomato, sliced mushrooms (and anything else you like such as avocado, soy cheese, cucumber, beansprouts, etc) and whatever sauce you like (i.e. mustard, hummus, salad dressing, etc). Ideally, add Tofu Cutlets. Insert toothpicks and cut into quarters.
