Large pasta shells or cannelloni
1 pk frozen spinach (250-500g), thawed and all the water squeezed out (or fresh equivalent)
2-3 cloves of garlic, minced (or about 1 tsp of garlic powder)
1 onion, minced (or about 1 tsp onion powder)
1/2 green pepper, minced
1 tomato, minced
1 c grated soy mozza (or however much looks right mixed in with the rest of the ingredients)
Cook large pasta shells or cannelloni until very al dente.
Over medium heat, fry onion and garlic in oil until softened. Add spinach, green pepper, tomato, fry for a couple more minutes, stirring. Remove from heat and stir in soy mozza (and garlic/onion if using powder).
Once cool enough to handle, stuff pasta and place in a pan with a layer of sauce underneath. Cover the pasta with sauce, sprinkle with crushed chilis if you like spicy, sprinkle with additional cheese if desired, cook at 400 for 30-40 minutes.
