3 ripe bananas, mashed (see Banana Muffins for freezer tip)
3/4 c brown sugar
Egg replacer for 2 eggs
1 tsp vanilla extract
1/2 c margarine, softened
2 1/4 c flour
1 1/2 tsp baking powder
1/4 tsp baking soda
Dash of nutmeg, cinnamon, salt
1 c diced strawberries (or frozen blueberries or other fruit)
In a bowl, beat together the bananas, brown sugar, egg replacer, vanilla and margarine.
In a separate bowl, combine the flour, baking powder, baking soda, nutmeg, cinnamon, salt. Add to the banana mixture and stir well. Add strawberries (or other fruit).
Grease a muffin pan and fill each muffin 2/3 full with batter. Bake at 360 for 20 - 25 minutes or until a toothpick comes out clean.
