Roast Sweet Potatoes

3 sweet potatoes, cut into chunks (about 6 c)
2 T oil
2 cloves of garlic, minced
1/4 tsp cayenne
1/4 tsp thyme

Toss together and arrange in a single layer on a greased tray. Cook at 400 for 20 minutes, turning halfway.
