Quinoa (pronounced Keen-Wah) is a grain that’s regarded as one of the healthiest known foods. Gluten-free and low in sodium, it’s high in protein, fibre, phosphorous, potassium, magnesium, iron, zinc, etc., and is a complete protein with a perfect balance of all essential amino acids.
Soak 1 c quinoa for 10 minutes in warm water then rinse well with hot water to remove its natural bitter coating. Boil 2 c water (add oil or margarine if desired) and add quinoa. Lower heat, cover & simmer 15-20 minutes until well cooked (you'll see lots of white squigglies - don’t be grossed out by the squigglies, it’s just the seed cracked open).
Excellent rice substitute. Has a slightly crunchy texture and a nice nutty flavour.
