1 c flour
1 T sugar
1/8 tsp salt
2 T baking powder
1 c soy milk
2 T oil
Mix dry ingredients in a bowl. Stir in soy milk and oil. If desired, add ½ - 1 c fruit.
Drop ¼ c batter per pancake in a greased pre-heated frying pan at medium/medium high. You know the rest.
