2 T oil
1 clove of garlic, minced
1 medium onion, diced
3 medium carrots, diced
2 peppers, diced
1 celery stalk, diced
2 c chopped broccoli (or cauliflower)
1 T curry powder
1/8 tsp cayenne (or more if you like spicy)
2 medium tomatoes, chopped
1/2 c water
1/2 tsp salt
1 can chickpeas, mashed
2 T peanut butter
1 tsp lemon juice
Heat oil at medium-high, add garlic, onion, carrots, pepper, celery, sauté about 5-7 min, stirring, until onions are translucent. Add broccoli, curry powder, cayenne, cook a couple more minutes. Add tomatoes, water, salt. Simmer covered until veggies are tender, about 10 min. Remove from heat and stir in mashed chickpeas, peanut butter, lemon juice. Combine well. Transfer to greased loaf pan(s), pack down, smooth out top. Bake 30-40 min at 375.
