Cupcakes

Chocolate:
1 c soy milk
1 tsp apple cider vinegar
1 c flour
1/3 c cocoa powder
3/4 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
3/4 c sugar
1/3 c oil
1 1/2 tsp vanilla

Vanilla:
1 c soy milk
1 tsp apple cider vinegar
1 3/4 c flour
2 T cornstarch
3/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3/4 c sugar
1/3 c oil
2 1/4 tsp vanilla

Whisk soy milk & vinegar, set aside for a few minutes to curdle.

In a large bowl, combine flour, baking soda/powder, salt, stir well. If chocolate, add cocoa; if vanilla, add cornstarch.

In another bowl, beat together soy milk mix, sugar, oil, vanilla. Stir in dry ingredients until smooth.

Grease or line a cupcake pan, fill each 2/3 full, bake at 350 for 20-22 minutes until a toothpick comes out clean. Cool.
