1 can chickpeas, drained and rinsed
1/4 c each of onion, green pepper, celery, diced
1/2 tsp each of thyme, paprika, cayenne, crushed chilis
1 T parsley
1 1/2 T flour
1 T cornstarch
Salt and pepper to taste
Heat oil in a frying pan over medium/medium-high. Sauté diced onion, green pepper & celery for a few minutes, stirring.
Mash chickpeas by hand or in a food processor. Add veggies, spices, flour and cornstarch. Mix well. Place in the fridge for 30 minutes.
Reheat oil. Shape 6 patties and fry 4-6 minutes per side until nicely browned and crispy.
Good as burger patties, sandwich fillers, or on their own like hash browns.
