3 ripe bananas
1/4 c oil or margarine, softened
1 c sugar
2 c flour
1 tsp salt
1 tsp baking soda
In a large bowl, mash bananas. Add oil/margarine and sugar, mix.
In a separate bowl, mix flour, salt, baking soda. Combine with banana mixture.
Grease a muffin pan and fill each muffin 2/3 full. Bake 20-25 minutes at 360 or until a toothpick comes out clean.
Note: When your bananas over-ripen put them in the freezer. There they’ll go black and nasty but that makes them perfect for use in banana recipes like these. Just give them an hour or so on the counter to defrost and then ignore how gross they look and feel when you peel them.
