2 c flour
3/4 c sugar
2 1/2 tsp baking powder
1 1/4 tsp baking soda
1/4 tsp salt
2-3 T ground flax seed (optional)
4 tsp egg replacer mixed with 5 T water
1 c soy milk
1/2 c margarine, melted
1 1/2 c mixed berries
In a bowl, mix flour, sugar, baking powder, baking soda, salt, and ground flax seed (optional).
In a separate bowl, mix egg replacer and water, then add milk and melted margarine. Combine with dry ingredients and mix. Stir in berries.
Fill a greased muffin tray and bake at 400 for 20 minutes or until a toothpick comes out clean. Berrylicious.
