2 very ripe bananas (see Banana Muffins for freezer tip)
1 ½ c flour
1 ½ tsp baking powder
½ tsp baking soda
¼ tsp salt
½ tsp cinnamon
1 T margarine, melted
1 ½ c soy milk
1 T vinegar
1 tsp vanilla
3 T chocolate chips
Mix vinegar and soy milk and let stand for 5 minutes. Mix dry ingredients in a bowl. Mash bananas with the margarine and vanilla. Combine all ingredients, mix well. Stir in chocolate chips. Drop ¼ c batter per pancake at medium/medium high.
